Triple Berries and Cream Muffins

I just love muffins.  And I love berries and cream.  That's why I couldn't pass up these Triple Berries and Cream Muffins!  The coconut oil in the recipe adds even an extra burst of yumminess.  It's hard to describe the deliciousness of these muffins, you'll just have to make them and taste for yourself.  :)

I love to bake, but my little Peanut is scared of my mixer.  That really limits my options since so many baking recipes require creaming butter and sugar together with a mixer.

One of my solutions is to make recipes that don't require a blender, like this recipe and this recipe.

That also leaves me looking at a lot of quick bread and muffin recipes.

These muffins are nice and moist. I'm always disappointed when I make muffins and they're dry, but these did not disappoint! I think it's the sour cream that keeps them moist.

Be sure to store these in the refrigerator in a tightly covered container. They keep much longer that way.

And you'll want them to keep awhile because this recipe makes a pretty large batch. I ended up with 22 regular sized muffins and 48 mini muffins.

Peanut loved the mini muffins. They were the prefect size for her little hands to grab and for her little mouth to bite.

Triple Berries and Cream Muffins
This recipe is adapted from Linda Gilmore's Berry Cream Muffins from Taste of Home.
Ingredients
  • 4 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups frozen berries; blueberry, raspberry and strawberry
  • 4 eggs, lightly beaten
  • 2 cups sour cream
  • 1/2 cup olive oil
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup milk, additional 1 tablespoon at a time as needed
Instructions
1) Preheat oven to 400°. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Add berries and toss gently. In another bowl, combine the eggs, sour cream, oils, vanilla and milk; mix well. Stir into dry ingredients just until moistened. Add additional milk, 1 tablespoon at a time, as needed. 
 2) Fill greased or paper-lined muffin cups two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean for regular size muffins or 13-16 minutes or until a toothpick comes out clean for mini muffins. Cool for 5 minutes before removing from pans to wire racks. 
3) Store in a tightly covered container in the refrigerator.
