I made these Sugar Cookie Bars in a pinch. They were so easy, I just had to share them with you!
On Resurrection Sunday we were invited to a friend's house for a get together. I hate showing up to a host's house empty handed, but it was the night before the event and I still hadn't found the time to make something to bring.
I woke up to nurse my little Peanut at about 3 am and couldn't get back to sleep. I was lying in bed thinking of what to make in the short amount of time I would have the next morning.
I turned to Pinterest and one idea lead to another and after viewing what seemed like a hundred recipe ideas, I turned off my phone and went back to sleep.
The next morning I was ready as Peanut and I entered the kitchen for breakfast. I knew I wanted to make a bar cookie.
There is no scooping, cutting out, etc. with a bar cookie. Just smooth it in the pan and pop it in the oven.
I opened up a box of sugar cookie mix that I had in the cupboard. The side of the box said I could substitute melted butter for the softened butter.
I was all over that.
It's way easier to incorporate melted butter than softened butter. And since Peanut is scared of the electric mixer, melted butter was even that much more appealing, as I would have had to mix in the softened butter by hand.
I rolled out the dough directly onto my 9x13 cookie sheet, sprinkled sugar on top and put it in the oven for 7 minutes.
Once it was done I cut it into squares while still warm and left it in the pan to cool.
All-in-all, from start to finish, it probably only took me 15 minutes to make.
The best part? I didn't have to show up empty handed!
Oh, and Peanut and I each got to eat a cookie for breakfast. Yum!
