Quick and Easy Olive Oil Bread

This post for Classic Crusty Herbed Dinner Loaf had me sold right away.  (I've actually been calling this Olive Oil Bread, but when I went to link to the recipe I realized I was way off! Oh well. :) )  The biggest selling point was the claim that it only takes an hour from start to finish. 


Homemade bread in an hour?!  For some reason my brain thinks any recipe involving yeast takes many hours and lots of labor.

It looked delicious, sounded simple and quick, and used ingredients I had on hand.  The recipe lets you choose your choice of herb to add.  I chose oregano because I like oregano and it is a pretty versatile herb.



The recipe also called for 1 tablespoon of quick rising yeast, but I just used a packet of active dry yeast that I had in my freezer.

Yeast stores really well in the freezer. My packet had a 2012 expiration date on it, but my bread turned out just fine!


I had made a broccoli and cheddar soup the night before and wanted to make this bread to go with it. 

While making breakfast for Peanut I threw this bread together.

It was as easy as it sounded.


The only thing I will change next time I make it will be to let the bread rise in a different spot on my warm stove.

I had the bowl right over the oven vent and it actually started to cook the bottom part of the dough while it was rising.

After my initial panic, I decided to just knead the cooked part in with the rest of the dough and it still turned out amazing!


I sliced off a piece as soon as it was cool enough, spread some butter on it and shared it with Peanut.

It was delicious!  Peanut especially liked it.  She kept coming back for more bites.

My husband thought it tasted a little sweet for a savory bread, but he ate it.  :)

As I can attest to by this post, I like simple and quick recipes. At least since I've had my little Peanut. So don't let the fact that is uses yeast intimidate you. Give it a try! Here is the recipe.
